I don't even know what to say about these madams.

Other than if they were the only food item left on the planet I would marry them.

I'm a little premature with my Easter baking this year but I'm off sailing the seven seas again over Easter, so need to pile on the chocolatey pounds in advance! :)

Chocolate Orange & Blueberry Cake

I've finally perfected my cream cheese frosting recipe!! Joy of joys! I can hear the trumpets a sounding!

Nine times out of ten I want to throw my frosting mixture against the wall because it's just not behaving to my OCD standards. I end up going through about three bags of icing sugar to get the right consistency.

Not this time. No siree!

I have conquered the cream cheese!

Defeated the frosting ratio gods!

Whooped the icing sugar's arse!

Malteser Fridge Cake #bakeamillion

First off, gigantic apologies for disappearing off the face of the planet these last few weeks, I've been boating around the globe again with Ida and have abandoned my kitchen and baking utensils! They were really starting to collect dust. But due to horrific jet lag I was up at 5.30 again and in need of something to do, so I brushed them off and made some delicious treats for Comic Relief!

Gooey centred, squishy muffins with juicy bursts of blueberry, crunchy streusel topping and blocks of smooth white chocolate...to be honest what more could you want...

...except maybe a glass of milk to accompany it :)

You know when you hear about something special and it gives you a warm, fuzzy glow inside and makes you want to open your front door and shout, 'YES! THERE ARE RUDDY WONDERFUL PEOPLE IN THE WORLD'...

Well when I received an email from The Collective Dairy about their new scheme for Action Against Hunger - #tub4grub, that was one of those moments.

*NUT FREE* Christmas Pudding Energy Balls!

With all these scrumptious healthy desserts flying around the place containing all sorts of weird and wonderful super-ingredients, I often find myself being unable to eat most of them because the key ingredient tends to be nuts, of which I am allergic *cue pantomime 'aahh'.

One look at Deliciously Ella's blog and deli is enough to make me weep as so much of it contains the dreaded noisettes!

The main culprit being energy balls!

So I'm taking matters into my own hands and making my own super duper nut free energy balls which, by the way, taste insanely good and definitely feel like you're munching on a naughty treat rather than a healthy snack! (Minus the icing, but you can always ignore that bit if you're being well behaved).
