Gluten Free Food Journal :: Entry 1

I've jumped aboard the free-from train !

Time for an over share :: Recently I've been having really bad tummy cramps in the evenings and I've realised, like a lot of people, the recurring theme is when I've been eating the dreaded gluten-filled bread! Yesterday was the worst it's ever been, I'd devoured a crumpet, piece of toast & 3 slices of pizza in the space of about 5 hours (oops). Bad idea. Cramps galore. I went to bed with a hot wrap on my tummy, teddy in hand, feeling very sorry for myself.

So I've decided to actually do something about it and try going gluten free for a month. I've thought about it a few times but never just bit the bullet, is anyone else on this journey for these reasons?

I won't record everyday's food journal as that would get a tad tedious and boring, but I'll scatter a few here & there in case anyone wanted to jump on the bandwagon and get some recipe ideas :)

Brekkie :: 2 Scrambled eggs w/ sauteed spinach

Lunch ::  GF Oatcakes w/ cottage cheese & pineapple
               Crabsticks
               Carrots & Humous

Dinner :: Courgette Noodles w/ salmon, roasted tomatoes & peppers in a light cream cheese sauce.

Snacks :: Banana & blueberries

For the dinner idea, I'd had a zucchini noodle recipe pinned on my Truly Scrumptious' Pinterest board for weeks so thought I'd give it a whirl finally and....oh my golly gosh, SO delicious! And William wasn't complaining about the lack of carbs on his plate so everyone's happy :)

Does anyone have any favourite gluten free recipes? I'd love to try them out!

Thanks Jemma :) yeah it's proving quite tricky but I think it's just a matter of staying strict with myself and getting used to it that's all. B x

Thanks Stefanie, it's really lovely getting feedback as I wasn't sure if anyone would find it interesting at all. Glad someone does :) xx

I hope you're tummy is feeling better, OH has suffered with similar 'cramps' for years and was diagnosed with IBS. Certain breads flair the problem and he's found a gorgeous loaf in Sainsburys made with quinoa grains and sunflower seeds is much kinder to him.
