*CAKE PORN* Crushed Crunchie Marble Cake

The Betty Stamp

*Warning* - Contains contents of cake porn. Do not look if you're failing your new years resolution of 500 calories a day.

This cake was a sensational hit for my big brother's birthday (if I may say so myself). I wanted to make him something special and tasty and boy did it go down a treat :) You can crush any choccie bar you like on top but his all time fave is a Crunchie which worked perfectly to add a little honeycomb crunch.

The Betty Stamp

Oh gosh just look at it....dreamy.

What you'll need//

250g caster sugar
250g soft butter
300g self raising flour
4 eggs
2 tsp baking powder
few drops vanilla extract
2 tbsp milk
2 tbsp warm water
2 tsp cocoa powder

For the icing//

150g softened butter (salted or unsalted, nay matter)
300g icing sugar
few drops of vanilla extract
1 tsp cocoa powder
2 (ish) tbsp milk

Yummy extras//

2 Crunchie bars
1 big bar white chocolate
Raspberry jam

The Betty Stamp

What to do//

Preheat oven at 160 degrees C

In a large mixing bowl, cream together the butter and caster sugar. Add the flour, eggs, baking powder, vanilla and milk and beat until well mixed. Spoon half the mixture into another bowl.

Into a small bowl, stir together the warm water and cocoa powder. Leave to cool then add to one of the cake mixtures

Lightly grease and line two equally sized cake tins. Randomly dollop alternate spoonfuls of each mixture into the cake tins. With the end of a spoon or knife, create pretty patterns in the mixture for your marble effect :)

Bake for approximately 1 hour then rest your out turned cakes onto a cooling rack.

For the icing, mix together the icing sugar, softened butter, cocoa powder and vanilla. Depending on if you think it needs more liquid or not, add a couple of tbsps of milk or icing sugar until fluffy icing is created!

Now for the fun part, put your Crunchies into a sealed bag and smash against a surface (or with a hammer...) Melt the white chocolate in a little bain marie and decorate your cake as you wish! I spread some raspberry jam and icing in the middle for extra yumminess.

Now to slot all the pieces of the puzzle together. Spread half of your buttery creamy icing on top of the bottom tier and half on the top tier. Crumble over as much or as little (pfft) of your Crunchie crumbs and carefully piece them together to create the most DELICIOUS CAKE IN THE WORLD.

….carried away?….maybe a little.

Now serve the fattest slice for yourself and let everyone else fight over the rest :)
