The GIANT JAFFA CAKE!



Going an entire 2 weeks without baking even a single cookie threw me into a sugarless hole that I will never enter into again I tell you! Never!

I think my White Chocolate Blackberry Crumble Cake was what did it. I consumed my entire month's recommended allowance of sugar in one cake. Not that I regret a single mouthful!

But a very special occasion this week broke my cold turkey cake ban...

WILLIAM'S BIRTHDAY! Happy Birthday Willamena.

And what better way to celebrate than with a giant Jaffa cake!!

48 hours this cake lasted, not even. I think I had two pieces...guess where the rest went... Pfft. I'll start calling him William Piglet Patrick.




What you'll need //

125g caster sugar
125g softened butter
125g self raising flour
half tsp baking powder
2 eggs
couple drops vanilla extract
1 pack Hartley's orange jelly
1 big bar dark chocolate
1 orange




What to do //

Follow instructions on jelly packet. Cling film a bowl slightly smaller than your baking tin and pour jelly mixture in approx 2-3cm deep. Leave to set in fridge for the amount of time stated on packet. (I left mine over night).




Preheat oven to 170 degrees C (fan) and grease a baking tin. Mine was 6.5in diameter x 3in deep, so adjust ingredients accordingly for your baking tin size.

Cream together butter and sugar in a large mixing bowl. Beat in eggs, baking powder and vanilla extract. Sift flour in gradually whilst mixing.

Pour mixture into greased baking tin and bake for approx 30-40 mins depending on size of tin. At around 25 mins check your cake with a skewer to see if it comes out clean. Leave to cool on a wire rack.

Slice off the domed sponge surface and carefully lift out the fully set cling filmed jelly. Tip your jelly onto the centre of your sponge and gently peel off cling film.




In a bain marie, melt your dark chocolate and leave to cool slightly before pouring over your jelly and sponge. Spread evenly and grate over some orange rind for decoration.

I absolutely love the look of your (or rather William's) cake - totally inspired :-) How on earth did you manage to go 2 wks without getting the wooden spoon and mixing bowl out of the cupboard Betty?!
